This dish was inspired by Julia Child. We were watching the "Potato Show", and she made this simple potato dish that looked amazing. So, we took the idea and adapted it to work with the ingredients we had on hand. It would make a great side dish to any meal, but we actually ate it as the main course. It was fantastic!
We started with two large potatoes, boil them and let them cool. Once they are cool enough to handle, slice them and place them in a buttered 10" cast iron skillet. Next, mince 2 cloves of garlic and 1 small onion or shallot, saute and add to the skillet. Mix two large eggs, 1 cup of milk and 1 cup shredded cheese together, and pour mixture over the potatoes and top with a little more shredded cheese. For the ultimate Julia Child touch, you can add a little bit of butter on top to make it brown up even more. Bake uncovered in a 375 degree oven for 30-40 minutes, or until the cheese is nice and browned on top. Remove from oven and let cool for 5 minutes. The milk/egg will set up into a sort of custard, and it is much easier to slice and serve once it's formed. Serves 4 happy campers!
